So many new, interesting, funny and bizarre things have come our way during this Pandemic.
Remember Tiger King? Doesn’t that seem like a million years ago already? What else kept me busy….let’s see, loved the Michael Jordan 30 on 30, have watched 4 seasons (24×4 episodes) of Friends with my daughters, read probably 10 books, was creeped out but fascinated with the Jeffrey Epstein doc on Netflix. And then came Amy.
Just when my husband and I hit total TV burnout we found the hilarious and sweet “Amy Schumer Learns to Cook” – and my life changed and I fell in love with:

Amy’s sweet husband (and chef) Chris teaches his not-comfortable-in-the-kitchen wife Amy how to make a few things. Their banter is cute, hilarious and happy and entertaining. She busts out her favorite cocktails from her years as a bartender. LOVE this girl, in one episode it’s just good old buttery “Cougar Crack” Rombauer chardonnay.
But NOTHING beats the Paloma, a refreshing and delicious cocktail. It’s now being served up (a little too) often in our house this Pandemic and it’s made life much sweeter! Here’s Amy’s recipe below. Cheers!

Tequilla-Soaked Pineapple
1 pineapple, peeled, cored, and cut into cubes
Half of a 750-milliliter bottle tequila
Cocktail:
3 ounces sparking water
A splash of fresh grapefruit juice
Directions:
- For the tequila-soaked pineapple: Put the pineapple in a large resealable container and pour the tequila over it. Refrigerate for at least 8 hours.
- For the cocktail: Put ice in a rocks glass and add 2 ounces of the tequila from the tequila-soaked pineapple. Top with the sparkling water and a splash of grapefruit juice. In a separate glass, coarsely muddle a piece of the pineapple, then add to the rocks glass. Garnish with a slice of grapefruit, blood orange or pineapple if desired.
